They might’ve cut their teeth at James Beard award-winning chef Frank Stitt’s Bottega, but the owners of hotbox have created a dining experience that's worlds away from that beloved Birmingham institution. Operating out of an unassuming Airstream trailer tucked away on the back patio of Parkside Café, each of the delicious, reasonably priced Asian-influenced dishes—lemongrass fried chicken, pork sausage bánh mì or nam tok beef brisket—is a testament to the inventiveness, attention to detail, and respect for fresh ingredients, masterfully prepared that their white-napkin alma mater is famous for. Oh, and the hotbox burger. The hotbox burger!
