Jamaica meets New Mexico at DW Bistro, a south side Summerlin gem. Their extraordinary culinary point-of-view is a result of chef-owner Dalton Wilson’s upbringing. He learned to cook from his father at an early age. You guessed it... chile peppers play a big role here, but in a very well-rounded, flavorful way. Co-owner, Bryce Krausman, runs the front-of-house and greets each guest like family. The brunch scene is crazy fun here. Arrive early to avoid the wait. If you slept in, don’t worry, they’ll make sure you get a drink to tide you over. The DW Blood Mary is nearly a meal on its own—complete with heirloom tomato, habanero olive, a pickle, and strip of jalapeño bacon. Yup.
